Conch in Butter Sauce

Ingredients:

  5lb  Conch

  1lb  Butter

  1     Onion

  2     Sticks of Celery

  1      Head of Scallions

  2      Pegs of Garlic

  6      Pegs of Cloves

  1      Whole Hot Pepper

Instructions:

Wash conch in bowl of vinegar and lime.  Rinse then cut conch into slices or dices.  Put conch in to pressure cooker with pepper, onion, celery, scallions, garlic and clovers.  Salt conch to taste.  Pressure for about 45 minutes then bring to a cool.

Melt 1lb of margarine  in sauce pan.  Pour cooled conch in to sauce pan and add half cup of water from pressured conch.  Simmer in sauce for about 30 minutes.

Serve with fungi, dumplings, green bananas and sweet potatoes.  Or for a more conservative side order serve with white or peas on rice. Serve 5.
